Texas 2 Alarm Chili

Hey you all!!!  We have company this week, my Aunt and Uncle are staying with us from out of town!!!  My uncle is a born and raised native Texan…I told them although it is spring and chili isn’t something you think of this time of year, I’ve been  wanting to learn how to make chili the Texas way for so long!!   They told me the fool proof way and easiest way is to use the box of famous wicks 2 alarm chili spices… it comes out perfect every time and it only takes about an hour. The instructions are right on the box.  My aunt has a little tip…add a tsp of sugar to cut the acid…that’s the northern way…and my uncle doesn’t know the difference.

1 box of wicks 2 alarm chili spices

2 lbs ground beef

small chopped onion

1 small can diced tomatoes

1 small can tomato sauce

1 small jar pinto beans

2 cans water

brown meat, add tomatoes and spices. WAIT until the end to add the HOT PEPPER spice.

Add the hot pepper spice a little at a time and taste as you go along. My uncle kicked his own bowl up several degrees with that HOT PEPPER spice!!

Add the mesa powder at the end as directed. We doubled the recipe.  My uncle likes his chili served over cooked white rice topped with cheese and sour cream. Guess what, that is exactaly how we served it, along with corn bread on the side.

PS my husband loved it!! I think I’ll have to start making chili the Teaxas way from now on!!!

I just wanted to add a pic of the chili mac we served the next day with the left over chili…it was sooo good!! ps… diced onion makes this even better!!
