Blueberry Lemon Tartlets

July 12, 2011

These little Blueberry Lemon Tart lets are so easy and healthy! You only need 4 ingredients,

well maybe 5 if you count dusting them with powdered sugar.

15 filo crusts

1-6 0z. container of Lemon yogurt

1/4 t. of lemon zest

fresh blueberries

Optional: dusting with powdered sugar

The Process:

Place the yogurt in a coffee filter over a strainer

for at least 4 hours to remove the liquid

You’ll be surprised how much is released into the dish below

and absorbed in the filter.

Next add your lemon zest and stir together

Get your tray of tart lets out and with a teaspoon

begin filling each one with a little amount of lemon custard/yogurt.

There is enough for each shell.

Then top with your blueberries…

and dust with powdered sugar so they look nice and pretty!

Don’t forget to plate the on a pretty white platter like the one I used

and you can get at TJ Maxx for $7.99
